Herbi Recipe: Vegan Pepperoni Pizza Panini

This vegan Pepperoni Pizza Panini is so tantalising you’ll probably want to make it every week! This recipe is brought to you by Jane (@veganonthegc) using Herbidoor's Vegan Pepperoni and it is UNBELIEVABLY delish, with just enough heat 🔥

To make 3 Panini’s you’ll need:

PIZZA SAUCE - Mix together:

  • 1/2 cup passata
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tsp maple syrup
  • 1 tsp minced garlic
  • 3 drops liquid smoke
  • 1 Tbs coconut aminos
  • * cheat version: mix the passata with 3 Tbs BBQ sauce

PANINI

  • 3 panini’s sliced in half
  • 15 thin slices of Herbidoor's pepperoni
  • Pizza sauce
  • 1 cup grated 🌱 mozzarella
  • 3 mushrooms, sliced
  • 1 green capsicum, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup tinned pineapple pieces, drained
  • 8-10 kalamata olives, sliced
  • Basil leaves

Steps:

  1. Heat your sandwich press or grill
  2. Spread the panini halves with pizza sauce. One the bottom half, top with mushroom, onion, capsicum, cheese, pepperoni, pineapple, tomato, olives & more cheese. Place on the top half & place in the sandwich press or grill until the cheese has melted. To help the cheese melt, splash a little water on the grill plate to create steam.
  3. Slice & serve
